I don’t know a formal name for it. I like red sauce, and my mother made a spaghetti and meatballs that was pretty good. But she wasn’t Italian.
When I was cooking for my family, I tweaked my mother’s recipe with herbs, etc., and that is still my favorite. For a really good unusual sauce, you would need to what a local caterer served. He made a *pink* alfredo sauce that was fabulous over stuffed shells.
I love pasta with pesto.
I love them all – even just garlic/butter sauce.
