How do you cook your potatoes? Roast? Boiled? Baked? What’s your favorite way?

Usually either baked or mashed. Potatoes are my favorite starch, but Walt prefers rice, so I don’t cook potatoes very often.
I like them a lot of ways — baked, hash browns — but I don’t eat them often. Too much carbs without enough satisfaction.
For the two of us, I usually bake them. I confess to using packaged microwave potatos for mashed (again just for the two of us). And I’ve just started doing some sliced and roasting. I’ve never done anything but frozen fries or hashbrowns. When we eat breakfast out, I love to have breakfast potatoes. And we love baked sweet potatoes (yams), too.
I grew up in potato country, so make them all sorts of ways – mashed, baked, twice baked, fried, boiled, au gratin…
My favorite, however, is mashed with goat cheese.
Pretty much never met a potato I didn’t like. Love ‘em most ways – baked, au gratin, mashed, hash browns, cooked with a roast, but my current favorite way is oven roasted in chunks with olive oil, salt and pepper.
